Peel and dice mango, slice and chop jalapeno (no seeds), and small dice the red onion. Place in a medium sized bowl.
Zest lime, juice the lime and put into a small bowl, and whisk to combine. Chop ½ clove of garlic and scrape one Tahitian vanilla bean. Add garlic and vanilla to lime juice bowl. Whisk all ingredients together.
Add the lime juice mixture to the mango mixture. Toss to combine. Refrigerate or use immediately.
