  • 5 eggs
  • 2½ cups whole milk
  • ½ cup of sugar or more if you like it real sweet
  • a nice pinch of saffron
  • ½ teaspoon cardamom
  • 2 teaspoons vanilla


  1. Preheat oven to 300 degrees
  2. In a large bowl, mix eggs, sugar and vanilla together well (it is best to use a mixer)
  3. Add milk and continue mixing
  4. add in in the saffron and cardamom
  5. Pour or ladle mixture into oven safe ramekins taking care to not overfill
  6. Put the ramekins in a roasting pan and fill halfway up with warm water
  7. Cover the whole pan with tin foil
  8. Put tray in oven for 45 minutes
  9. Remove when cool enough to handle and refrigerate for 4 hours
  10. serve chilled with coffee or tea
